8 oz (225g) fettuccine or your pasta of choice

1 lb (450g) boneless, skinless chicken breasts, diced

6 slices of bacon, chopped

1 cup (150g) sweet corn (canned or frozen)

1 cup (240ml) heavy cream

1/2 cup (120ml) chicken broth

1/2 cup (50g) grated Parmesan cheese

2 cloves garlic, minced

1 small onion, diced

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy and golden brown, about 5-7 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain, leaving the rendered fat in the skillet.

      Sauté the Chicken: In the same skillet, add the olive oil (if needed) and the diced chicken. Season with salt, pepper, and Italian herbs. Cook, stirring occasionally, until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside with the bacon.

        Prepare the Sauce: In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant. Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the skillet.

          Add Cream and Corn: Reduce the heat to low and stir in the heavy cream and sweet corn. Allow the mixture to simmer gently for 3-4 minutes until it thickens slightly.

            Combine Everything: Return the cooked chicken and bacon to the skillet. Stir in the grated Parmesan cheese until melted and fully combined. Add the drained pasta to the skillet and toss until the pasta is well coated with the creamy sauce.

              Serve: Remove from heat and garnish with fresh parsley. Serve immediately with additional Parmesan cheese, if desired.
