12 oz (340g) pasta (fettuccine or spaghetti)

2 cups cherry tomatoes, halved

1 cup heavy cream

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

Grated Parmesan cheese, for serving

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.

    Sauté the Tomatoes: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the halved cherry tomatoes and cook for 5-7 minutes until they start to blister and release their juices.

      Create the Creamy Sauce: Lower the heat and pour in the heavy cream, stirring well to combine. Let it simmer for about 2-3 minutes, then stir in balsamic vinegar, chopped basil, salt, and pepper to taste.

        Combine Pasta and Sauce: Add the cooked pasta directly to the skillet with the creamy tomato sauce. Toss everything together until the pasta is well coated. If the sauce is too thick, gradually mix in some reserved pasta water until you reach the desired creaminess.
