8 oz linguine pasta

1 lb boneless, skinless chicken thighs, diced

½ cup unsalted butter

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp chili powder

1 tsp onion powder

½ tsp cayenne pepper (adjust for spice preference)

1 cup chicken broth

1 cup heavy cream

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

2 green onions, sliced

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced chicken thighs, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Transfer the chicken to a plate and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, add the remaining butter. Once melted, stir in the minced garlic, smoked paprika, chili powder, onion powder, and cayenne pepper. Sauté for about 1-2 minutes until fragrant.

        Combine Sauce and Chicken: Pour in the chicken broth and bring to a simmer. Add the heavy cream, stirring until well combined. Return the cooked chicken to the skillet, and let it simmer in the sauce for an additional 5 minutes.

          Add Vegetables: Stir in the cherry tomatoes and corn, allowing to cook for another 3-4 minutes until everything is heated through and the tomatoes start to soften.

            Combine with Pasta: Add the cooked linguine to the skillet, tossing everything together gently until the pasta is well coated in the Cowboy Butter sauce. Adjust seasoning with additional salt and pepper if needed.

              Garnish and Serve: Remove from heat, sprinkle with sliced green onions and chopped parsley. Serve hot with grated Parmesan cheese on the side, if desired.
