Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, use an electric mixer to cream together the softened cream cheese and butter until smooth and fluffy.
Add the granulated sugar and brown sugar to the mixture, beating well until fully incorporated.
Mix in the egg and vanilla extract until combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Do not overmix.
In a small bowl, combine the additional granulated sugar and ground cinnamon for rolling.
Using a tablespoon or cookie scoop, portion out the dough and roll them into balls.
Roll each ball in the cinnamon-sugar mixture until fully coated and place them on the prepared baking sheet, about 2 inches apart.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked but will firm up as they cool.
Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
