1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

½ cup powdered sugar

½ cup cold unsalted butter, cubed

1 large egg yolk

3 tablespoons cold water

1 cup heavy cream

8 oz dark chocolate (70% cocoa), chopped

2 tablespoons granulated sugar

1 teaspoon pure vanilla extract

Pinch of salt

Sea salt flakes, for garnish

Instructions
 

Make the Chocolate Crust:

    - In a large mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, and powdered sugar until well combined.

      - Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

        - In a small bowl, whisk the egg yolk and cold water together. Add it to the flour mixture, and mix until the dough comes together. If it’s too crumbly, add a little more cold water, one teaspoon at a time.

          - Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

            Prebake the Tart Shell:

              - Preheat the oven to 375°F (190°C).

                - On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess.

                  - Prick the bottom with a fork and place a sheet of parchment paper over the crust. Fill with pie weights or dried beans.

                    - Bake in preheated oven for 15 minutes. Remove the weights and parchment and bake for an additional 5 minutes, until the crust is firm. Let it cool completely.

                      Prepare the Chocolate Filling:

                        - In a small saucepan, heat the heavy cream over medium heat until just simmering (do not boil).

                          - Remove from heat and add the chopped dark chocolate, granulated sugar, vanilla extract, and a pinch of salt. Stir until the chocolate is fully melted and the mixture is smooth.

                                - Let the tart cool at room temperature, then refrigerate for at least 2 hours to set.

                                  Serve:
