Ingredients

3 cups Rice Krispies cereal

1 cup creamy peanut butter

1 cup semi-sweet chocolate chips

1/4 cup unsalted butter

1/4 cup powdered sugar

1 teaspoon vanilla extract

Pinch of salt

Extra chocolate chips for drizzling (optional)

Instructions

Prepare the Cupcake Pan: Line a muffin tin with cupcake liners to make it easier to remove the cups after they are set.

Melt the Peanut Butter Mixture: In a medium saucepan over low heat, combine the creamy peanut butter, unsalted butter, and powdered sugar. Stir constantly until the mixture is melted and smooth. Remove from heat and add the vanilla extract and a pinch of salt.

Combine with Rice Krispies: In a large mixing bowl, pour the melted peanut butter mixture over the Rice Krispies cereal. Gently fold until the cereal is evenly coated, making sure not to crush the Rice Krispies.

Press into Muffin Tin: Using a small amount of the mixture at a time, press it firmly into the bottom and up the sides of each cupcake liner in the muffin tin, forming a cup shape. Leave a little space in the middle to pour in the chocolate.

Prepare the Chocolate Topping: In a clean saucepan, melt the semi-sweet chocolate chips over low heat, stirring constantly until smooth. Alternatively, you can melt them in the microwave in 30-second increments, stirring in between, until melted.

Fill the Cups: Spoon the melted chocolate into the center of each Rice Krispie cup, filling them up to the top without overflowing.

Chill and Set: Place the muffin tin in the refrigerator for at least 30 minutes or until the chocolate has fully set.

Optional Drizzle: If desired, melt a few additional chocolate chips and drizzle over the top of each cup for an extra decorative touch.

Serve: Once set, gently peel away the cupcake liners and serve your delicious Chocolate Peanut Butter Rice Krispie Cups. Enjoy!
