4 red bell peppers, finely chopped

2 red chili peppers, seeded and finely chopped

1 medium onion, finely chopped

4 cloves of garlic, minced

1 cup apple cider vinegar

2 cups granulated sugar

1 tablespoon grated fresh ginger

1 teaspoon salt

1 teaspoon pectin (optional for thicker jam)

Juice of 1 lime

Prepare the Ingredients: Start by washing and finely chopping the red bell peppers and red chili peppers. Make sure to wear gloves while handling chili peppers to avoid irritation.

    Sauté the Aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for another minute until fragrant.

      Combine Ingredients: Add the finely chopped bell peppers and chili peppers to the pot. Stir in the apple cider vinegar, granulated sugar, salt, and lime juice. Mix everything thoroughly to combine.

        Cook the Mixture: Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 30-40 minutes, stirring frequently, until the peppers are soft and the mixture has thickened. If using pectin, add it during the last 10 minutes of cooking.

          Check the Consistency: To test the consistency, spoon a small amount onto a plate and let it cool for a minute. If it holds its shape, it’s ready; if not, continue cooking for a bit longer.

            Blend (Optional): For a smoother texture, you can use an immersion blender to blend the jam to your desired consistency. Proceed with caution as the mixture will be hot.

              Jar the Jam: Remove from heat and carefully ladle the hot chilli jam into sterilized jars, leaving about ¼ inch of headspace at the top. Seal the jars with lids while still hot to ensure a proper vacuum seal.

                Cool and Store: Allow the jars to cool to room temperature. Once cool, store the jars in the fridge or a cool, dark place for up to 6 months.
