1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Juice of 1 lime

8 small corn tortillas

1 cup chopped fresh cilantro

1 cup diced onion

1 cup diced tomatoes

1 avocado, sliced

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a large bowl, mix olive oil, minced garlic, cumin, smoked paprika, cayenne pepper, lime juice, salt, and pepper. Add the chicken thighs and coat them well. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for stronger flavor).

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off. Grill or sear each piece for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F. Let the chicken rest for 5 minutes before slicing.
