2 cups cooked jasmine rice (preferably day-old)

1 pound boneless, skinless chicken thighs, diced

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 teaspoons sesame oil

3 tablespoons vegetable oil

3 cloves garlic, minced

1 small onion, diced

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, sliced

2 large eggs, beaten

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prep the Chicken: Marinate the diced chicken in a bowl with soy sauce, oyster sauce, and a pinch of pepper for about 15 minutes. This will enhance the chicken's flavor.

    Heat the Wok: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken and cook until it's golden brown and cooked through, about 5-7 minutes. Remove the chicken from the wok and set it aside.

      Sauté Aromatics: In the same wok, add another tablespoon of vegetable oil. Toss in the minced garlic and diced onion, sautéing until fragrant and the onion becomes translucent, about 2-3 minutes.

        Add Vegetables: Stir in the mixed vegetables and cook for an additional 2-3 minutes until they are tender.

          Scramble Eggs: Push the vegetable mix to one side of the wok, then pour in the beaten eggs on the other side. Scramble the eggs until fully cooked, then mix everything together.

            Incorporate Rice: Add the cooked jasmine rice to the wok, breaking up any clumps. Drizzle with sesame oil and stir everything together until the rice is well combined with the chicken and vegetables.

              Season to Perfection: Taste the fried rice and adjust seasoning with additional soy sauce, salt, and pepper as needed.

                Finish with Green Onions: Turn off the heat and toss in the sliced green onions. Give everything one final stir and garnish with fresh cilantro, if desired.
