Ingredients

1 lb ground chicken

1/2 cup feta cheese, crumbled

1/4 cup pitted Kalamata olives, finely chopped

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/4 cup breadcrumbs (optional, for texture)

4 whole wheat burger buns

1 cup baby spinach

1 large tomato, sliced

1/2 cucumber, thinly sliced

Tzatziki sauce for serving

Instructions

In a large bowl, combine the ground chicken, feta cheese, Kalamata olives, parsley, garlic, oregano, salt, pepper, and red pepper flakes (if using). Mix gently until all ingredients are well incorporated.

If the mixture seems too wet, you can add the breadcrumbs to help bind the mixture. Press the mixture gently to form four equal-sized burger patties.

Preheat your grill or a skillet over medium-high heat. Lightly oil the grill grates or skillet to prevent sticking.

Cook the chicken burgers for about 5-6 minutes on each side, or until they reach an internal temperature of 165°F (75°C) and have nice grill marks.

Toast the whole wheat burger buns on the grill for about 1-2 minutes until golden brown.

Assemble each burger by placing a chicken patty on the bottom half of the bun, followed by a handful of spinach, a slice of tomato, and some cucumber slices.

Top with a generous dollop of tzatziki sauce, then place the top half of the bun over it.

Serve immediately with sweet potato fries or a fresh salad on the side. Enjoy your Mediterranean twist on a classic burger!
