Ingredients
  

1 whole chicken (about 4-5 pounds), skin-on and bone-in

10 cups cold water

2 medium onions, quartered

3 carrots, chopped into large chunks

3 celery stalks, chopped into large chunks

4 cloves garlic, smashed

1 bay leaf

1 teaspoon whole black peppercorns

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt to taste

Optional: 1-2 sprigs of fresh herbs (like dill or rosemary) for added flavor

Instructions
 

Prepare the Chicken: Rinse the whole chicken under cold water and remove any giblets from the cavity, if included. Pat dry with paper towels.

    Combine Ingredients: In a large stockpot, place the whole chicken along with the quartered onions, chopped carrots, chopped celery, smashed garlic, bay leaf, black peppercorns, dried thyme, and dried parsley.

      Add Water: Pour in 10 cups of cold water, ensuring that it completely covers the chicken and vegetables.

        Bring to Boil: Place the stockpot over medium-high heat and bring the mixture to a boil. Once boiling, reduce the heat to low and skim off any foam that rises to the surface.

          Simmer: Cover the pot partially with a lid and let it simmer gently for about 1.5 to 2 hours. The longer you simmer, the richer the broth will become. Occasionally check to make sure it’s not boiling too vigorously and add more water if necessary.

            Check for Doneness: After 1.5 to 2 hours, the chicken should be fully cooked and tender. It should easily pull away from the bone. Use tongs to carefully remove the chicken from the pot and set it aside to cool.

              Strain the Broth: Once the chicken is cool enough to handle, strain the broth through a fine-mesh sieve or cheesecloth into a large bowl. Discard the solids (vegetables and spices).

                Season to Taste: Return the strained broth to the pot and season with salt to taste. If using fresh herbs, you can add them now for additional flavor.

                  Store or Use: The broth can be used immediately in your favorite recipes, or it can be cooled and stored in the refrigerator for up to 5 days or frozen for up to 3 months.
