Prepare the Rice Noodles: Begin by cooking the rice noodles according to the package instructions. Once cooked, drain and set aside.
Cook the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced chicken thighs and cook for about 5-7 minutes or until they turn golden brown and are cooked through. Remove the chicken from the skillet and set aside.
Sauté Aromatics: In the same skillet, add a touch more oil if necessary. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
Add Broccoli: Toss in the broccoli florets and a splash of water (about 2-3 tablespoons) to steam. Cover and let it cook for about 3-4 minutes until the broccoli is bright green and tender-crisp.
Combine Ingredients: Return the cooked chicken to the skillet with the broccoli. Pour in the soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Stir well to combine all the ingredients.
Mix in Noodles: Add the cooked rice noodles to the skillet. Toss everything together, ensuring that the noodles are well coated with the sauce and all ingredients are evenly mixed. Cook for an additional 2-3 minutes to heat everything through.
Serve: Plate the chicken broccoli rice noodles, garnishing with chopped green onions and a sprinkle of sesame seeds for added texture and flavor.
