Ingredients
  

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon sweet paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 cup chicken broth

1 cup heavy cream

4 cups fresh spinach

1 tablespoon fresh lemon juice

Grated parmesan cheese for serving (optional)

Fresh parsley, chopped for garnish

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, smoked paprika, sweet paprika, and oregano. Make sure they are coated evenly.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the chopped onions and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Pour in the chicken broth and bring to a simmer, scraping any brown bits off the bottom of the pan. Add the heavy cream and stir well to combine.

          Add Spinach: Reduce heat to low and add the fresh spinach to the skillet, stirring until wilted, about 2-3 minutes.

            Combine and Simmer: Return the seared chicken breasts to the skillet, spooning some of the sauce over the top. Let it simmer for an additional 5 minutes to allow the flavors to meld.

              Finish It Off: Stir in the fresh lemon juice and taste for seasoning, adjusting as necessary.

                Serve: Plate the chicken and spinach, drizzling the creamy sauce over the top. Sprinkle with grated parmesan cheese and fresh parsley for a pop of color and flavor.
