Ingredients

For the cookie dough:

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup chocolate chips (optional for extra richness)

For the cheesecake filling:

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

½ cup sour cream

1 cup cherry pie filling (or fresh cherries, pitted and diced)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined. If desired, fold in chocolate chips. Chill the dough in the refrigerator for about 30 minutes for easier handling.

Prepare the Cheesecake Filling: In another bowl, beat together the cream cheese and powdered sugar until smooth. Stir in the vanilla extract and sour cream until combined. Gently fold in the cherry pie filling. Set aside.

Assemble the Cookies: Take a spoonful of cookie dough (about 1.5 tablespoons) and flatten it in your hand. Place about 1 tablespoon of the cheesecake filling in the center. Carefully fold the cookie dough around the filling and shape into a ball. Repeat with the remaining dough and filling.

Bake the Cookies: Place the stuffed cookie balls on the prepared baking sheets, spaced about 2 inches apart. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers may look slightly soft; they’ll firm up as they cool.

Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Savor: Enjoy your delicious Cherry Cheesecake Stuffed Cookies warm or at room temperature.
