4 large russet potatoes, thinly sliced

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

2 cups heavy cream

1 cup whole milk

3 cloves garlic, minced

1 medium onion, finely chopped

¼ cup unsalted butter

2 tablespoons all-purpose flour

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (optional)

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the sauce: In a saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.

      Make a roux: Sprinkle the flour over the onion and garlic mixture, stirring continuously for about 2 minutes until golden.

        Add liquids: Gradually pour in heavy cream and whole milk, whisking continuously to prevent lumps. Stir in salt, pepper, and paprika. Continue cooking until the mixture thickens, about 5-7 minutes.

          Combine cheeses: Remove from heat and stir in the sharp cheddar and half of the Parmesan until melted and smooth.

            Layer the potatoes: In a greased 9x13 inch baking dish, arrange half of the potato slices evenly. Pour half of the cheesy sauce over the potatoes. Repeat with the remaining potatoes and sauce.

              Top with cheese: Sprinkle the rest of the Parmesan cheese over the top layer.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the potatoes are tender and the cheese is bubbly and golden brown.

                  Garnish and serve: Let it cool for a few minutes before serving. Garnish with fresh chopped chives for a pop of color and flavor.
