Prep the Cheese: Start by placing the cubed Velveeta cheese and cream cheese into a medium saucepan over low heat. Stir occasionally to ensure it melts evenly.
Add Rotel and Cream: Once the cheese has begun to melt, add the undrained Rotel tomatoes and heavy cream. Mix well until combined and smooth.
Incorporate the Ranch Flavor: Sprinkle in the ranch dressing mix, garlic powder, and onion powder. Stir until everything is well combined and the cheese is completely melted.
Thicken it Up: Continue to cook on low heat, stirring frequently to prevent burning, for about 5-7 minutes until the queso has thickened to your liking.
Stir in Cheddar: Add the shredded cheddar cheese and olive oil. Keep stirring until the cheddar is melted and the queso is creamy and cheesy. Season with salt and pepper to taste.
