Ingredients

1 pound smoked sausage, sliced into 1/4-inch rounds

2 pounds baby potatoes, halved or quartered

1 packet (1 oz) ranch dressing mix

1 cup shredded cheddar cheese

1/2 cup sour cream

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Potatoes: In a large mixing bowl, combine the halved or quartered baby potatoes with olive oil, ranch dressing mix, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the potatoes are well coated.

Arrange in Baking Dish: Spread the seasoned potatoes in a single layer in a large baking dish.

Add Sausage: Scatter the sliced smoked sausage evenly over the potatoes.

Bake: Place the dish in the preheated oven and bake for about 30-35 minutes, or until the potatoes are fork-tender and slightly crispy, stirring halfway through.

Add Cheese: Remove the dish from the oven and sprinkle the shredded cheddar cheese over the top. Return to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.

Serve with Sour Cream: Once out of the oven, drizzle the sour cream over the cheesy potato and sausage mixture.

Garnish: Sprinkle with chopped green onions for an extra burst of flavor and garnish.

Enjoy: Serve hot as a delicious main dish or hearty side!
