1 lb ground beef (80/20)

1 cup Italian bread crumbs

1/2 cup grated Parmesan cheese

1 cup shredded sharp cheddar cheese, divided

1/4 cup chopped fresh parsley

2 large eggs

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 cup ketchup

1/4 cup Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 cup mashed potatoes (prepared from scratch or instant)

1/4 cup milk

1/2 tsp paprika (optional for garnish)

Chopped green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, Italian bread crumbs, Parmesan cheese, 1/2 cup of cheddar cheese, chopped parsley, eggs, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined but do not overmix; this helps keep the meatloaf tender.

      Shape the Meatloaf: Transfer the meat mixture to a greased 9x13-inch casserole dish. Shape it into a loaf shape, ensuring it is evenly distributed throughout the dish.

        Add Mashed Potatoes: In a separate bowl, mix the prepared mashed potatoes with the milk to make them creamy. Spoon the mashed potatoes over the top of the meatloaf, spreading it evenly.

          Top with Cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the mashed potatoes. For added flair, you can sprinkle paprika for a pop of color.

            Bake: Place the casserole in the preheated oven and bake for approximately 50-60 minutes or until the meat is cooked through (internal temperature should reach 160°F or 70°C) and the cheese is bubbly and golden.

              Serve: Remove from the oven and let it rest for about 10 minutes before slicing. This helps the meatloaf hold its shape. Garnish with chopped green onions if desired and serve warm.
