Prepare the Filling: In a mixing bowl, combine the cooked chicken, shredded mozzarella cheese, cream cheese, minced garlic, garlic powder, Italian seasoning, paprika, salt, and black pepper. Mix until well combined.
Assemble the Wraps: Lay out a flour tortilla on a clean surface. Place a generous portion of the chicken and cheese mixture in the center of the tortilla. Top with fresh spinach and diced tomatoes, if using.
Fold the Wraps: Fold in the sides of the tortilla, then tightly roll it up from the bottom to the top, making sure the filling is well enclosed. Repeat for the remaining tortillas and filling.
Cook the Wraps: Brush a skillet lightly with olive oil and heat it over medium heat. Once hot, add the wrapped tortillas seam-side down. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
Serve: Once cooked, remove the wraps from the skillet and let them cool for a minute. Cut in half and serve warm, optionally with ranch or your favorite dipping sauce.
