Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup shredded cheddar cheese

1 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

4 large flour tortillas

1 cup fresh spinach leaves

1 cup diced bell peppers (any color)

2 tablespoons olive oil

Optional: ½ cup salsa or hot sauce for serving

Instructions

In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until everything is well incorporated and the mixture is creamy.

Heat the olive oil in a pan over medium heat. Add the diced bell peppers and sauté for about 3-4 minutes until they soften. Stir in the fresh spinach leaves and cook until wilted. Remove from heat.

Warm the tortillas in a dry skillet or microwave to make them pliable.

Spread an equal amount of the cheesy chicken mixture onto each tortilla, leaving about an inch from the edges. Then, layer the sautéed bell peppers and spinach on top.

Roll the tortillas tightly, folding in the sides as you go to create a wrap.

Return the wraps to the pan seam-side down and toast for 2-3 minutes on each side until golden and crispy. You can also place them in a preheated oven at 400°F (200°C) for about 10-12 minutes.

Slice the wraps in half and serve warm with optional salsa or hot sauce for dipping.
