2 cups fresh broccoli florets

2 medium potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

2 cups shredded sharp cheddar cheese

1 cup milk (or plant-based milk for a dairy-free version)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt (to taste)

1/2 teaspoon black pepper (to taste)

Optional toppings: croutons, extra cheese, chopped green onions

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for another 1 minute until fragrant.

    Cook the Vegetables: Add the diced potatoes and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, until the potatoes are tender.

      Add Broccoli and Seasoning: Stir in the broccoli florets, dried thyme, salt, and black pepper. Continue to simmer for another 5-7 minutes until the broccoli is tender but still vibrant in color.

        Blend the Soup: Using an immersion blender, carefully blend the soup until it reaches your desired consistency (smooth or chunky). If you don’t have an immersion blender, you can transfer the soup in batches to a countertop blender.

          Incorporate Cheese and Milk: Return the blended soup to low heat. Stir in the milk and shredded cheddar cheese until melted and creamy. Adjust seasoning with more salt and pepper if needed.

            Serve & Enjoy: Ladle the soup into bowls and top with optional toppings like croutons, extra cheese, or chopped green onions.
