Cheesecake Stuffed Baked Apples

Ingredients
  

4 large Granny Smith apples

8 oz cream cheese, softened

1/4 cup granulated sugar

1/2 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 cup sour cream

1/4 cup crushed graham crackers

2 tbsp chopped pecans or walnuts (optional)

1/4 cup caramel sauce (for drizzling)

Whipped cream (for serving, optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    Wash and core the apples, making sure to leave a good amount of the bottom intact to hold the filling.

      In a mixing bowl, combine softened cream cheese, granulated sugar, vanilla extract, cinnamon, and sour cream. Blend until smooth and creamy.

        Stir in the crushed graham crackers and chopped nuts until evenly distributed.

          Carefully stuff each apple with the cream cheese mixture, packing it in gently.

            Place the stuffed apples upright in a baking dish and drizzle with a little caramel sauce over the top of each apple.

              Pour a small amount of water into the bottom of the baking dish (about 1/4 inch) to help steam the apples while they bake.

                Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the apples are tender and the filling is slightly golden.

                  Remove from the oven and let cool for a few minutes before serving. Drizzle with extra caramel sauce and add whipped cream if desired.
