1 lb Andouille sausage, sliced

1 cup long-grain rice, rinsed

1 medium onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chilies

2 cups chicken broth

1 tsp Cajun seasoning

1/2 tsp smoked paprika

1/2 tsp dried oregano

Salt and pepper to taste

2 green onions, sliced (for garnish)

1 tbsp olive oil

Optional: Hot sauce for serving

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced Andouille sausage and cook until browned, about 3-4 minutes.

    Sauté the Vegetables: Add the diced onion and bell pepper to the skillet and sauté for another 3-4 minutes until they start to soften. Stir in the minced garlic and cook for an additional minute until fragrant.

      Combined Ingredients: Stir in the rinsed rice, diced tomatoes with their juice, chicken broth, Cajun seasoning, smoked paprika, dried oregano, and season with salt and pepper to taste. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low, cover the skillet, and allow it to simmer for about 20 minutes or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Finish and Serve: After cooking, remove the skillet from heat. Let it sit covered for another 5 minutes. Fluff the rice with a fork, garnish with sliced green onions, and serve with hot sauce if desired.
