Prepare the Pasta: Begin by cooking the fettuccine according to package instructions. Drain and set aside, reserving 1 cup of pasta water.
Season the Chicken: While the pasta is cooking, season both sides of the chicken breasts with 1 tablespoon of Cajun seasoning, salt, and pepper.
Cook the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until cooked through and golden brown. Remove from the pan, let it rest for a few minutes, then slice into strips.
Sauté the Shrimp: In the same skillet, add the butter and minced garlic. Sauté for about 1 minute until fragrant, then add the shrimp. Sprinkle the remaining Cajun seasoning over the shrimp. Cook for 3-4 minutes until shrimp are pink and opaque. Remove from the skillet and set aside with the chicken.
Create the Alfredo Sauce: In the same skillet, pour in the heavy cream. Bring to a gentle simmer and scrape the bottom of the pan to mix in the flavorful bits. Slowly whisk in the Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water until desired consistency is achieved. Season with salt and pepper to taste.
Combine Ingredients: Add the cooked fettuccine, sautéed shrimp, and sliced chicken to the skillet. Toss everything together until the pasta, shrimp, and chicken are coated in the creamy Alfredo sauce.
