Ingredients
  

4 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning (store-bought or homemade)

2 tablespoons olive oil

1 medium onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked rice or pasta (for serving)

Instructions
 

Prepare the Chicken: Season the chicken breasts generously with Cajun seasoning on both sides. Let them marinate for at least 30 minutes (or overnight for more flavor).

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and diced red bell pepper. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional 1 minute.

        Make the Sauce: Pour in the chicken broth and bring to a simmer. Then, stir in the heavy cream. Let the mixture simmer for about 5-7 minutes until it thickens slightly. Season with salt and pepper to taste.

          Combine: Return the cooked chicken to the skillet, spooning the creamy sauce over the top. Let everything simmer together for another 2-3 minutes to reheat the chicken.

            Serve: Serve the Cajun chicken over cooked rice or pasta, garnished with fresh chopped parsley.
