1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

2 3/4 cups whole milk

4 large egg yolks

2 tablespoons unsalted butter

1 teaspoon vanilla extract

Whipped cream (for topping)

A pinch of sea salt (for garnish)

Instructions
 

In a medium saucepan, whisk together the brown sugar, granulated sugar, cornstarch, and salt until well combined.

    Gradually add the milk, whisking continuously to prevent lumps.

      Over medium heat, cook the mixture, stirring constantly until it thickens and comes to a gentle boil (about 6-8 minutes).

        In a separate bowl, whisk the egg yolks. Once the pudding mixture is boiling, slowly temper the egg yolks by adding a small amount of the hot pudding into the yolks while whisking constantly.

          Pour the tempered yolk mixture back into the saucepan with the pudding, continuing to whisk steadily.

            Cook for another 2-3 minutes until the pudding returns to a simmer and thickens to a velvety consistency.

              Remove from heat and stir in the butter and vanilla extract until completely melted and combined.

                Pour the pudding into individual serving dishes or one large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.

                  Chill in the refrigerator for at least 2 hours (or until set).

                    Serve with a dollop of whipped cream on top and garnish with a pinch of sea salt for an added flavor contrast.
