Preheat the Oven: Start by preheating your oven to 350°F (175°C).
Cook the Rice: In a medium saucepan, add the rice and double the amount of water. Bring it to a boil, then cover and simmer for about 15-20 minutes, or until water is absorbed and rice is fluffy. Set aside.
Sauté Veggies: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until translucent.
Combine Ingredients: In a large mixing bowl, combine the cooked rice, cooked chicken, sautéed onion and garlic, broccoli florets, cream of chicken soup, chicken broth, paprika, black pepper, and half of the shredded cheddar cheese. Stir until well combined.
Transfer to Casserole Dish: Spoon the mixture into a greased 9x13 inch casserole dish, spreading it evenly.
Add Toppings: Sprinkle the remaining cheddar cheese on top. If desired, add breadcrumbs for extra crunch.
Bake: Cover with foil and bake in the preheated oven for 25 minutes. Remove foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
