4 large flour tortillas

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or diced bacon)

1/2 cup diced bell peppers (red, green, or yellow)

1/4 cup finely chopped green onions

Salt and pepper to taste

1 tablespoon butter

Hot sauce (optional, for serving)

Instructions
 

Prepare the filling: In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in the shredded cheese, cooked sausage, bell peppers, and green onions.

    Cook the egg mixture: In a large skillet, melt the butter over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are fully set and fluffy, about 5-7 minutes.

      Assemble the roll-ups: Lay a flour tortilla flat on a clean surface. Spoon a portion of the egg mixture onto the center of the tortilla (approximately 1/4 of the filling). Roll the tortilla tightly around the filling, and place it seam-side down on a plate. Repeat with the remaining tortillas and filling.

        Heat the roll-ups: In the same skillet used for the eggs, warm the roll-ups over medium heat, turning occasionally until they are lightly golden and heated through, about 2-3 minutes.

          Serve: Slice each roll-up into pinwheels or enjoy them whole. Serve warm with hot sauce on the side, if desired.
