2 large russet potatoes, cut into fries

Vegetable oil (for frying)

4 large eggs

1 cup cheese curds (white cheddar works well)

1 cup sausage gravy (homemade or store-bought)

Salt and pepper to taste

Chopped green onions (for garnish)

Instructions
 

Prepare the Fries: Rinse the cut potatoes in cold water to remove excess starch. Pat them dry with paper towels. Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels; sprinkle with salt.

    Cook the Eggs: In a non-stick pan, cook the eggs sunny-side up or to your liking. Season with salt and pepper.

      Heat the Gravy: If using store-bought sausage gravy, heat it in a saucepan over medium heat until warm. If making homemade sausage gravy, prepare it beforehand.
