Breakfast Enchiladas

Ingredients
  

6 large flour tortillas

1 cup diced bell peppers (mixed colors)

1 cup diced onions

1 cup cooked and crumbled breakfast sausage (or bacon)

6 large eggs

1 cup shredded cheddar cheese

1 cup salsa (your favorite kind)

1/2 teaspoon ground cumin

1/2 teaspoon paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat a tablespoon of oil over medium heat. Add the diced bell peppers and onions; sauté until they are soft and translucent, about 5-7 minutes.

      Cook the Sausage: Add the cooked breakfast sausage to the skillet, stirring until heated through, approximately 2 minutes.

        Scramble the Eggs: In a mixing bowl, whisk the eggs with cumin, paprika, salt, and pepper. Pour the egg mixture into the skillet with the sausage and veggies. Cook until the eggs are scrambled and just set, stirring occasionally, about 3-4 minutes. Remove from heat.

          Assemble the Enchiladas: On a clean surface, lay a tortilla flat. Spoon a generous amount of the egg, sausage, and veggie mixture down the center of the tortilla. Top with a sprinkle of shredded cheddar cheese. Roll the tortilla tightly around the filling and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.

            Add Salsa and Cheese: Pour the salsa evenly over the top of the enchiladas. Sprinkle the remaining cheddar cheese over the top.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Once done, let the enchiladas cool for a few minutes. Garnish with fresh cilantro if desired. Serve with sour cream on the side for dipping.
