Ingredients

8 large eggs

1 cup whole milk

1 cup shredded cheddar cheese

1 cup diced ham (or cooked sausage)

1 cup diced bell peppers (mixed colors)

1/2 cup diced onion

1 cup frozen hash brown potatoes (thawed)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

Fresh chives or parsley for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

Prepare the Baking Dish: Grease a 9x13-inch baking dish with cooking spray or a little butter to prevent sticking.

Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs and whole milk until fully combined. Add in the garlic powder, onion powder, salt, and black pepper. Mix well.

Layer the Ingredients: Spread the thawed hash browns evenly in the bottom of the prepared baking dish. Then add the diced ham or sausage, bell peppers, and onions on top of the hash browns.

Add Cheese and Egg Mixture: Sprinkle the shredded cheddar cheese over the layered ingredients. Carefully pour the egg mixture evenly over the entire casserole, ensuring to cover all the ingredients.

Bake the Casserole: Place the baking dish in the preheated oven and bake for 45-55 minutes, or until the casserole is set in the center and the edges are lightly golden.

Cool and Serve: Once baked, remove the casserole from the oven and let it cool for about 5-10 minutes. Garnish with fresh chives or parsley if desired. Cut into squares and serve warm.
