Ingredients

1 cup fresh blueberries (or frozen, but thaw and drain)

1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ teaspoon almond extract

1 cup white chocolate chips (optional)

½ cup chopped nuts (walnuts or pecans, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together with an electric mixer until light and fluffy, about 2-3 minutes.

Add Egg and Extracts: Beat in the egg until well combined, then add the vanilla and almond extracts. Mix until the mixture is smooth.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.

Fold in Blueberries and Extras: Gently fold in the blueberries, white chocolate chips, and nuts (if using) using a spatula. Be careful not to break the blueberries.

Scoop Cookies: Use a cookie scoop or tablespoon to drop rounded dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked. They will continue to cook on the baking sheet after removing from the oven.

Cool: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve warm or store in an airtight container for up to a week. Enjoy your soft, chewy, and bursting blueberry heaven cookies!
