The first step in making these egg rolls is to prepare the cream cheese filling. The cream cheese should be at room temperature to ensure a smooth mixing process. Begin by taking an 8-ounce block of cream cheese and letting it sit out for about 30 minutes before you start. This will make it easier to blend with the other ingredients.

Ingredients

1 cup fresh blueberries

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 tsp lemon juice

10 egg roll wrappers

1 egg, beaten (for egg wash)

Oil for frying (canola or vegetable oil)

Sugar for dusting (optional)

Whipped cream for serving (optional)

Instructions

Prepare the Cream Cheese Filling: In a large mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Use a hand mixer or spatula to mix until smooth and creamy.

Add Blueberries: Gently fold in the fresh blueberries into the cream cheese mixture. Be careful not to crush the blueberries too much; you want to keep some whole for texture.

Assemble the Egg Rolls: Lay an egg roll wrapper on a clean flat surface, with one corner pointing towards you (like a diamond). Place about 2 tablespoons of the cream cheese and blueberry filling in the center.

Roll It Up: Fold the bottom corner over the filling, then fold in the sides, and continue to roll up tightly to enclose the filling completely. Seal the top corner with a little beaten egg wash to keep it from unrolling. Repeat with remaining wrappers and filling.

Heat the Oil: In a deep pan or fryer, heat oil to about 350°F (175°C). You want enough oil so that the egg rolls can float while frying.

Fry the Egg Rolls: Carefully add 3-4 egg rolls at a time to the hot oil. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Dust with Sugar: If desired, sprinkle a little sugar over the fried egg rolls while they are still warm for an added touch of sweetness.

Serve and Enjoy: Allow the egg rolls to cool slightly, then serve warm with whipped cream on the side for dipping.
