2 cups rolled oats

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon cinnamon

2 cups almond milk (or milk of choice)

¼ cup maple syrup (or honey)

2 large eggs

1 teaspoon vanilla extract

2 cups fresh or frozen blueberries

¼ cup chopped nuts (walnuts or pecans, optional)

2 tablespoons coconut oil or melted butter

Additional blueberries and nuts for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with coconut oil or butter.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, salt, and cinnamon. Stir until well mixed.

      Combine Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, eggs, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just incorporated. Gently fold in the blueberries and nuts if using.

          Transfer to Dish: Pour the mixture into the prepared baking dish, spreading it out evenly. If desired, sprinkle a few extra blueberries and nuts on top for garnish.
