The Italian Cream Soda is a delightful concoction that traces its origins back to the charming cafés of Italy, where coffee culture reigned supreme and sweet, bubbly beverages offered a refreshing respite from the heat. Though it may be called “Italian,” the drink has evolved over time, especially in North America, where it gained popularity in the 1980s. The combination of flavored syrup, soda, and cream creates a unique experience that appeals to both adults and children alike.

Ingredients

For the Homemade Fruity Syrups:

1 cup fresh strawberries, hulled and chopped

1 cup fresh raspberries

1 cup sugar

1 cup water

1 teaspoon vanilla extract

1 tablespoon lemon juice

For the Cream Soda:

1 cup club soda or sparkling water

2-3 tablespoons of your choice of homemade fruity syrup

1/4 cup heavy cream

Ice cubes

Fresh fruit slices (optional, for garnish)

Whipped cream (optional, for topping)

Instructions

Make the Fruity Syrups:

    - In a saucepan, combine the strawberries, raspberries, sugar, and water.

      - Bring to a boil over medium heat, stirring occasionally until the sugar is dissolved and the berries release their juices (about 5-7 minutes).

        - Lower the heat and let it simmer for another 10-15 minutes until the syrup thickens slightly.

          - Remove from heat, stir in the vanilla extract and lemon juice, and let cool.

            - Strain through a fine mesh sieve to remove seeds and pulp. Store the syrup in a bottle in the fridge for up to a week.

              Prepare the Cream Soda:

                - In a tall glass, add a generous scoop of ice cubes.

                  - Pour 2-3 tablespoons of your homemade fruity syrup over the ice.

                    - Slowly add the club soda, pouring it gently to maintain the fizz.

                      - Top with the heavy cream, stirring gently to create a marbled effect.

                        Garnish and Serve:

                          - Garnish your Italian cream soda with fresh fruit slices and a dollop of whipped cream if desired.

                            - Serve immediately with a straw and enjoy the refreshing flavors!
