Ingredients
  

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup vegetable oil

1 1/2 cups granulated sugar

4 large eggs

3 cups finely grated carrots (about 5 medium carrots)

1/2 cup crushed pineapple, drained

1 cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

Zest of 1 orange (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      In a large mixing bowl, combine the vegetable oil and granulated sugar. Mix in the eggs, one at a time, until fully incorporated.

        Stir in the grated carrots, crushed pineapple, chopped nuts (if using), and vanilla extract until well combined.

          Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Do not overmix.

            Divide the batter evenly between the prepared cake pans.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Once baked, let the cakes cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.

                  For the cream cheese frosting, beat together the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and continue to beat until well combined. Stir in the vanilla extract and orange zest (if using).

                    Once the cakes are completely cool, place one layer on a serving plate, spread a generous amount of cream cheese frosting on top, and then place the second layer on top. Frost the top and sides of the cake with the remaining cream cheese frosting.

                      Decorate with additional walnuts or pecans on top for a finishing touch if desired.
