Ingredients
  

1.5 lbs ground beef

1 onion, finely chopped

3 cloves garlic, minced

2 cups mushrooms, sliced

1 large bell pepper, diced

4 cups mixed vegetables (carrots, peas, corn)

1 can (14 oz) diced tomatoes with herbs

2 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup grated cheddar cheese

4 cups cooked pasta (penne or rotini works well)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.

      Add the chopped onion and garlic to the skillet, cooking until the onion becomes translucent, about 3-4 minutes.

        Toss in the sliced mushrooms and bell pepper, cooking for another 5 minutes until soft.

          Stir in the mixed vegetables, diced tomatoes, beef broth, Worcestershire sauce, thyme, paprika, salt, and pepper. Bring the mixture to a simmer and allow it to cook for 10 minutes to meld the flavors.

            Add the cooked pasta to the skillet and stir until everything is well combined.

              Transfer the mixture to a greased 9x13 inch baking dish. Top with the grated cheddar cheese evenly.

                Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                  Once done, let the casserole sit for 5 minutes before serving. Garnish with fresh parsley for a vibrant finish.
