BBQ PINEAPPLE CHICKEN KABOBS

Ingredients
  

1 lb (450g) boneless, skinless chicken breast, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

1/4 cup soy sauce

1/4 cup BBQ sauce (plus extra for brushing)

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground ginger

1/2 teaspoon black pepper

Salt to taste

Wooden or metal skewers

Instructions
 

Prepare the Marinade: In a bowl, whisk together the soy sauce, BBQ sauce, honey, olive oil, minced garlic, ground ginger, black pepper, and salt. This will create a flavorful marinade.

    Marinate the Chicken: Place the cubed chicken into the marinade, ensuring it's well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 2 hours to allow the flavors to infuse.

      Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, you can skip this step.

        Build the Kabobs: Thread the marinated chicken, pineapple, red bell pepper, green bell pepper, and red onion onto the skewers alternately. Aim for about 3-4 pieces of chicken per skewer, interspersed with the veggies and pineapple.

          Preheat the Grill: Heat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C). If grilling indoors, use a grill pan over medium-high heat.

            Grill the Kabobs: Place the skewers on the hot grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and has nice grill marks.

              Baste with BBQ Sauce: During the last 5 minutes of cooking, brush the kabobs with additional BBQ sauce for a glossy finish and extra flavor.

                Serve: Remove from the grill and let them rest for a minute. Serve the kabobs hot, garnished with fresh cilantro or chopped green onions if desired.
