2 ripe bananas, mashed

1 cup rolled oats

1 cup almond milk (or any milk of choice)

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup semi-sweet chocolate chips (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tray with paper liners or lightly grease it to prevent sticking.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until all wet ingredients are well blended.

      Prepare Dry Ingredients: In another bowl, mix the rolled oats, baking powder, baking soda, cinnamon, and salt. Ensure they are evenly combined.

        Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can make the muffins dense.

          Add Mix-Ins: If you’d like, fold in the chopped nuts and/or chocolate chips to add extra flavor and texture to your muffins.

            Fill Muffin Cups: Spoon the batter into the prepared muffin tray, filling each cup about 3/4 full. This allows space for the muffins to rise while baking.

              Bake: Place the muffin tray in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Once baked, remove the muffins from the oven and allow them to cool in the tray for 5 minutes before transferring them to a wire rack to cool completely.
