Method
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the rolled oats, brown sugar, flour, ground cinnamon, and salt. Stir to combine.
Pour in the melted butter and mix until the oat mixture is crumbly and well coated with butter. If using, fold in the chopped walnuts for added crunch.
Place the peach halves cut-side up in a baking dish. Fill the cavities of the peaches with the brown sugar streusel mixture, pressing it down gently.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the peaches are tender and the topping is golden brown.
Remove from the oven and let cool slightly. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
