4 large eggs

4 cups fresh spinach, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Toasted bread or English muffins for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 3-4 minutes. Season with garlic powder, nutmeg, salt, and pepper. Remove from heat and let cool slightly.

      In a mixing bowl, combine the ricotta cheese, heavy cream, and half of the grated Parmesan cheese. Mix well until creamy and smooth, then fold in the sautéed spinach.

        Grease a baking dish or individual ramekins with a little olive oil. Spoon the spinach mixture into the bottom, creating small wells for the eggs.

          Carefully crack an egg into each well of the spinach mixture. Season the eggs with a bit more salt and pepper, then sprinkle the remaining Parmesan cheese on top.

            Place the baking dish in the preheated oven and bake for 15-20 minutes or until the egg whites are set, but the yolks remain slightly runny, or to your desired doneness.

              Remove from the oven and let cool for a minute. Garnish with fresh basil leaves before serving.

                Serve hot with toasted bread or English muffins for dipping and enjoy your savory meal!
