Ingredients

2 ripe avocados

1 cup Greek yogurt

1 lime (juiced)

1/2 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

1/2 cup cherry tomatoes (diced)

1/4 cup red onion (finely chopped)

1/4 cup cilantro (chopped)

1/2 cup corn (canned or fresh)

Tortilla chips or veggie sticks for dipping

Instructions

Prep the Avocados: Cut the avocados in half and remove the pits. Carefully scoop out a bit of the flesh to create a deep “boat” for the dip. Set the scooped avocado aside in a bowl.

Make the Dip: In the bowl with the scooped avocado, add Greek yogurt, lime juice, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mash everything together until smooth and well combined.

Fold in Veggies: Gently mix in the diced cherry tomatoes, chopped red onion, cilantro, and corn into the avocado and yogurt mixture until evenly distributed.

Fill the Avocado Boats: Spoon the prepared dip back into the avocado halves, filling them generously.

Serve: Arrange the avocado boats on a platter and serve immediately with tortilla chips or veggie sticks for dipping.
