2 cups all-purpose flour

1 1/2 tsp baking powder

1 tsp baking soda

1/2 cup packed brown sugar

1/2 cup unsalted butter, softened

3 large eggs

1 tsp vanilla extract

1 cup unsweetened applesauce

1 1/2 cups peeled and diced apples (like Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

1-2 tbsp milk (as needed for consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.

      Cream Butter and Sugars: In another large bowl, beat together the granulated sugar, brown sugar, and softened butter until light and fluffy. This will take about 3-4 minutes with an electric mixer.

        Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Incorporate the vanilla extract.

          Combine Wet and Dry Ingredients: Mix the applesauce into the butter and sugar mixture, then gradually add the dry ingredients, mixing until just combined. Be careful not to overmix.

            Fold in Apples and Nuts: Gently fold in the diced apples and, if using, the chopped walnuts or pecans.

              Divide and Bake: Pour the batter evenly into prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

                Cool the Cakes: Allow the cakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.

                  Prepare the Cream Cheese Frosting: In a medium bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and beat until fluffy, then mix in the vanilla extract. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.

                    Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
