2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1 large egg

1/4 tsp vanilla extract
