Ingredients
  

4 large apples, peeled, cored, and diced (such as Honeycrisp or Fuji)

1/2 cup brown sugar

1/4 cup water

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

A pinch of salt

1/4 cup raisins (optional)

Chopped pecans or walnuts for garnish (optional)

Instructions
 

Start by peeling, coring, and dicing the apples into small pieces. Set aside.

    In a large saucepan, combine the brown sugar, water, ground cinnamon, ground ginger, nutmeg, lemon juice, vanilla extract, and salt. Stir well until the brown sugar is mostly dissolved.

      Add the diced apples to the saucepan and stir to coat the apples with the sugar and spice mixture.

        Cook over medium heat for about 10-15 minutes, stirring occasionally. The apples should become tender and the mixture will thicken into a sauce-like consistency. If you’re using raisins, add them halfway through the cooking process.

          Taste the compote and adjust sweetness or spices as needed. If you want a thicker consistency, cook for an additional 5 minutes.

            Once finished, remove from heat and let cool slightly.

              Serve warm or chilled, garnished with chopped pecans or walnuts if desired.
