1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups mixed vegetables (bell peppers, zucchini, and broccoli work great)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon dried Italian herbs (or your favorite herb blend)

Salt and pepper, to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken and Veggies: In a large bowl, combine the cut chicken pieces and mixed vegetables. Drizzle with olive oil, then sprinkle garlic powder, onion powder, paprika, dried herbs, salt, and pepper over the top. Toss well until everything is evenly coated.

    Heat the Pan: In a large, non-stick skillet, heat a tablespoon of olive oil over medium-high heat.

      Cook the Chicken: Add the seasoned chicken pieces to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.

        Add the Veggies: Once the chicken is cooked, push it to one side of the pan and add the mixed vegetables. Cook for an additional 5 minutes, allowing the veggies to soften while stirring occasionally.

          Finish the Dish: Squeeze the juice of one lemon over the chicken and veggies, stirring to combine everything. Cook for another minute to incorporate the flavors.

            Garnish and Serve: Remove from the heat, garnish with freshly chopped parsley, and serve hot.
