1 cup fresh strawberries, pureed

1/2 cup rolled oats

1/4 cup almond butter

1/4 cup honey or agave syrup

1 tsp vanilla extract

For the Vanilla Layer:

1 cup cashews, soaked for 4 hours

1/4 cup coconut milk

2 tbsp honey or maple syrup

1 tsp vanilla extract

A pinch of salt

Toppings:

Shredded coconut

Fresh strawberries

Chopped nuts

Instructions
 

Prepare the Chocolate Layer:

    - In a mixing bowl, combine almond flour, cocoa powder, maple syrup, melted coconut oil, vanilla extract, and salt.

      - Mix thoroughly until a dense, sticky dough forms.

        - Press this mixture into the bottom of a lined cake pan (about 8x8 inches). Use the back of a spoon to smooth it evenly.

          - Place in the fridge to set for about 30 minutes.

            Prepare the Strawberry Layer:

              - In another bowl, combine the pureed strawberries, rolled oats, almond butter, honey, and vanilla extract.

                - Mix until well combined. The mixture should be thick but spreadable.

                  - Spread the strawberry layer over the chilled chocolate base in the cake pan. Return to the fridge for another 30 minutes.

                    Prepare the Vanilla Layer:

                      - Drain and rinse the soaked cashews. In a blender or food processor, combine cashews, coconut milk, honey, vanilla extract, and salt.

                        - Blend until completely smooth, scraping down the sides as needed. If too thick, add more coconut milk to reach desired consistency.

                          - Spread the vanilla layer over the strawberry layer gently. Smooth the top with a spatula.

                            Final Touch:

                              - Sprinkle shredded coconut and chopped nuts on top for decoration. Optionally, add sliced fresh strawberries for extra flavor and visual appeal.

                                - Cover the cake pan with a lid or plastic wrap and refrigerate for at least 4 hours, or overnight for the best results.
