Ingredients
  

2 ripe peaches, halved and pitted

1 cup arugula

8 oz burrata cheese

1/4 cup balsamic reduction

1/4 cup toasted walnuts, chopped

2 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

1 lb shrimp, peeled and deveined

1/2 cup coconut milk

1 lime, zested and juiced

1 tsp chili powder

1/2 tsp garlic powder

Salt and pepper to taste

8 small corn tortillas

1 cup red cabbage, shredded

1 avocado, sliced

Fresh cilantro for garnish

4 cups seedless watermelon, cubed

1 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

2 tbsp olive oil

1 tbsp balsamic vinegar

Salt and pepper to taste

Instructions
 

Preheat your grill to medium-high heat.

    Brush the halved peaches with olive oil and sprinkle with salt and pepper.

      Place the peaches cut side down on the grill and cook for about 4-5 minutes, until they have nice grill marks and are slightly softened.

        While the peaches are grilling, arrange the arugula on a serving platter.

          Once the peaches are done, remove them from the grill and let them cool slightly before placing them on top of the arugula.

            Tear the burrata cheese into pieces and scatter over the salad.

              Drizzle the balsamic reduction over the salad and sprinkle with toasted walnuts and fresh basil leaves.

                Serve immediately as a refreshing summer dinner.
